I've played the game at least 10 - 12 times, so my company changes everytime.  Usually some version of my new character name and Candy - Confectionary - Chocolates - Sweets - Delicacies etc.  For instance, Cecille's Confectionery.  I hope they leave this function and the sign function in the new Chocolatier because coming up with a sign that looks good is one my favorite parts of the game.  I wish they'd let the sign appear over the shops we buy.
