This should help get expert, but a lot of it relies on the colour bonuses, so always try for them. The following lists are all to help get the best colour bonuses and it's how I got expert. You may need to try this over and over, depending on how fast you are and how happy you keep everyone. Filling up the podium is key here and there are times where people waiting at the tables for food or deserts had to wait longer while I filled it up so I didn't lose anyone.

As usual you want to seat the ones who order slower first and wait a few seconds before seating some. As I moved up the line and left the Elderly Women and Hungry Men till the last rounds, you will need to seat some people and give drinks to keep them happy.  Same routine applies. Put out flowers, grab drinks in between filling up the podium, fill the podium one last time before taking orders, take orders in one and serve food, go back to the podium and fill it up before serving snacks or deserts, then after deserts give checks and leave dishes until you've filled the podium up again. If you have slower people i.e. Bookworms, Elderly Women, you can let them eat desert last and fill the podium while waiting for them to finish, but always give checks to everyone else first. The podium doesn't break the chain.

Table 1 (2)(Next to the order station), Table 2 (2)(Under Table 1), Table 3 (4)(Next to flowers), Table 4 (6)(Next To Drinks), Table 5 (6)(Below Table 3), Table 6 (4)(Below Table 4).

Round 1
In this round seat the Bookworms then wait a few seconds before seating the Joggers and finally seat the rest.

Table 2 - 2 Joggers (2 Red)
Table 3 - 4 Knights (2 Blue, 2 Green)
Table 4 - 6 Knights (4 Red, 2 Blue)
Table 5 - 6 Chatterboxes (3 Red, 3 Green)
Table 6 - 4 Chatterboxes (2 Red, 2 Blue)

Round 2
In this round seat the Elderly Women before everyone else and make sure you feed them drinks, as the Chatterboxes will bother them. I ended up not giving them desert, just the check, but if you keep them happy you should do fine.

Table 1 - 2 Elderly Women (2 Blue)
Table 3 - 4 Chatterboxes (2 Blue, 2 Green)
Table 4 - 6 Chatterboxes (Blue, 4 Red, Blue)
Table 5 - 6 Knights (2 Yellow, 3 Green, Yellow)
Table 6 - 4 Knights (1 Red, 3 Blue)

Round 3
In this round again seat the Elderly Women first and wait a few seconds before seating the other 2 tables. When you seat the Chatterboxes in Table 4, aim for the colour bonus.

Table 4 - 3 Chatterboxes (1 Blue, 2 Red)
Table 5 - 6 Elderly Women (3 Blue, 3 Green)
Table 6 - 4 Knights (2 Blue, 2 Red)

Round 4
In this round seat the Bookworms first and wait a few seconds. I took their order first then the Hungry Men and served them food first, this way they'll be done with desert etc before the Hungry Men order their second meal.

aaarrrggghhh! i have tried this sooooo many times and i still cant get expert, i have done it exactly the same way as the walkthrough, whats going on? what am i doing wrong? i am keeping everyone happy but im still nealr 2000 points short, completed every level but this, how come this one is sooo hard compared to the rest of the game!

I've been wondering about this. It was impossible for me to get an expert on this diner. Thanks, I will have to try it.
