Seat them anywhere, just remember to use the color bonuses, and do the same routine that you've been doing only this time you won't have to go to the podium. As far as the phone goes, you don't need it but if you want on the third round you can call in the music guy. He'll boost the heart meters of the seated customers and help you get better tips. You don't need to do this though, i never do. I got well past the expert score and you should to, if you need to, at anytime you can click pause and either re-start or resume the level.
