The most profitable recipe for me is the Saffron Sauce.  My last time through the game I had two factories making that sauce and that gave me more than enough money for ingredients and to make the large number of chocolates that had to be produced at the end.  I also ended up with my highest score ever.    Keeping an eye on the prices, Saffron does not seem to drop in value on the selling market more than a few dollars where as other chocolates sell well for a short time and then lose a great deal of their value.
