Can someone help me with the theme park Level 3 to even clear that level? I keep losing customers no matter what. Any help on this would be appreciated.

I do this level by only using 6 tables, the 3 nearest to the counter, and the table for 6 and the one to the left and right of the 6. You get a shorter chain but it makes it more manageable and so more people want dessert.
Make sure you match up the chair colours as much as possible and do the chaining especially for the desserts. Use the podium a lot to keep the queue happy - I often do the cashing up as a chain and then go back to the podium before I collect the plates, then again before I put out flowers.
