Don't expect this to work for you the first time, you may have to try it a few times to get the feel for it. When the game starts just wait a bit, you have no flowers. The first customers to arrive will be 4 girls, 4 yappers, and 2 tourists, you start to see as soon as the 2 tourists arrive. On these levels with no podium, you must seat and give food to the slower people first so they keep pace with the other people. I will list the customers in the order you should seat them, and give food in the same order, note that you won't always be taking the next person in line. You have no drinks so you will want to pick up the orders as quick as you can, picking up an order quickly will boost the heart meter. So pick up the orders as soon as the customers put down their menus, but remember to serve the food in the order listed. Give out just the checks as people finish, and then clear the dirty dishes and seat the next round. If your making good time then there will be rounds when you start to seat and not all the customers for that round have arrived yet, it's ok, they will be there. There were a few times I had to break a chain for mopping, but more often than not, I was able to fit in the mopping between chains. If it happens just go as far as you can with the chain you were working on, then mop and finish the chain. Either way it should not keep you from reaching expert score. Make good use of the color bonuses and I never had a problem with noisy people, there was always a way to seat them so they didn't bother others. Let me know if you have any questions. Good luck!
