I've written a walkthrough for Coral
Cave (the
waterpark) Level 3.
This will get you around 12k-13k. Expert is 11k or higher.
It's not the highest you can score, but it's a start.

The tables are split. There are two to the left and
4 to the right of the waterway. Closest to the counter, the
tables are (left to right) 1, 2 and 3. Below, they are 4, 5
and 6. One and 4 are closest to the podium. 3 is closest to
the lemonade. To save time, always chain deliveries,
pickups, etc on one side of the waterway (1 & 4, 3 & 6,
etc.).

Starting out, set out flowers before
going to the podium. Let it go off 1 time.

Round
1: 4 tables
2 tourists (blue) - table 4
2
bookworms (red) - table 1
1 girl (green) - table 3
1 family - table 5 - highchair

Deliver
lemonade to table 3. Grab any chili. Return to podium and
wait for all 4 tables to be ready to order.

Pick
up tables 3 & 5 and then 1 & 4. Return to podium. When it
goes off, mop table 5. Don't cash out yet.

If
bookworms at table 1 want chili, deliver it. Then, cash out
everyone. Clear tables and return to podium. When it goes
off, set flowers. Return to podium.

Round 2: 6
tables
2 tourists (red) - table 1
2 tourists
(blue) - table 4
1 bookworm (yellow) - table 6

girls (blue, blue, yellow, yellow) - table 5
1 dad and
son (blue, green) - table 3
2 moms w/babies (red, blue)

Snap photo at table 4 if time. Take
all orders. Take lemonade to table 5 while food cooks.
Return to podium.

Deliver food. Take chili to
any who ask. Mop tables 2 & 3. Snap photo for table 1 and
maybe 4 (sometimes they don't ask). Cash out all. Do not
clear tables. Go to podium.

When the podium goes
out, set out flowers. Go to podium.

Round 3: 4
tables
2 bookworms (yellow) - 6
2 bookworms
(green) - 3
2 moms w/babies (yellow, blue) - 2
1
family - 5 - highchair

Grab chili. Take orders,
but table 3 might break the chain for chili. Deliver food
and give lemonade (table 3 gets mad fast, and they're the
closest).

Mop and deliver any more chili. Rush
lemonade to table 3. Cash out all. Clear tables. Go to
podium.

Set flowers at table 5. Go to podium.
.
Round 4: 1 table
4 girls - table 5
.
Give lemonade and chili. Go to podium.
.
When it
goes off, take order from 5. Deliver food. Return to podium.
Cash out 5, clear table and set 1 flower (again at table 5).

Round 5: 1 table
4 bookworms - table 5
.
Take their order, give the food and lemonade and
cash out. Clear the table.

This should yield
around 13,630 points. I've gotten as high as 14,760.
