For anyone having problems reaching the goal/expert goals, I found that the best stratgey is to chain as much as possible except on the last group of customers. Watch the clock, your last bunch of customers comes in with around 1 minute left. Chain passing out the menus and then start filling the orders as quick as you can but keep an eye on the clock. When the clock has 12-15 seconds left, grab all the money you have to make room for new customers. You should have been able to fill 3-4 orders and can get another 3-4 customers. Give menus to the new people and then chain passing out all the orders and picking up all the money. Remember though, after giving menus to the new people, get the old customers their chocolates first.
