Well, color matching is no problem here, because pretty much you've given no choice on which one to choose.
Well, the way I've passed this stage is to use the podium until you've received a full load of customers. Leave the cell phone addicts out until you can get either joggers, families, and/or even lovebirds (the first two preferred) to buffer out their noise. You can even use the mothers with 2 children. Just be wary of the babies' cries.
Try to match groups of people as much as possible. Most definitely:
* While waiting for customers to fill up, grab a drink or two for reserves. Don't forget about the podium. * Chain your onion rings (if possible). * Chain your desert as much as possible. * Do not bus your 7 seats until you are sure that all those who want desert got it. * Try to get x7 chains as much as possible. This is the only way to guarantee expert on this stage.
