I have a slightly different approach than Joe's wife.  In the first round I sat 3 tables; 2nd round - 4 tables; 3rd round - 5 tables; 4th and last round - 5 tables.  Don't hesitate to use the tables for four for two people where you can to maximize color matching.  This will give you well over expert.  Good luck!  Hope you make out well.
